Biographies:
Nicola Philpott, PhD, is a Group Leader of the Minnesota West Suburbs chapter of Citizens’ Climate Lobby. She also runs a plant-based meal program at a shelter for people experiencing homelessness in Minneapolis. As president of the Parent Teacher Organization at her children’s school, Nicola coordinated installation of a school solar array. Nicola has a doctorate in biochemistry and molecular biology. She previously worked as a tenure-track assistant professor in the Department of Medicine at the University of Minnesota and has written 18 peer-reviewed scientific publications.
Anna Larsson spends her days working on strategy and finance in the corporate world, analyzing data and creating simple stories from complex information. By night, she is a long-time climate and environmental activist. The From Fork to Forest talk is a culmination of years of musing, reading, research and analysis. She lives with her partner and two teenagers in Minneapolis and loves biking.
